Smart Nutrition

These tasty muffins are a nutritious snack with 5 g of protein and 2 g of fibre per muffin. Who would have thought vegetables and chocolate could taste so good together!

Ingredients:

Muffins

  • 3 eggs
  • 150g Greek yoghurt
  • 1 tsp vanilla extract
  • 60g coconut flour 
  • 2 T dark cocoa powder  
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 3 grated zucchini (~250g)
  • 3 T milk or milk alternative
  • 4-5 T sweetener of choice e.g brown sugar, stevia or maple syrup (if using maple syrup omit the milk)
  • 6 squares dark chocolate or 1/4 cup dark chocolate chips

Chocolate icing

  • 100g yoghurt
  • 2 Tbsp cocoa powder
  • 2-3 tsp maple syrup

METHOD:

  • Preheat the oven to 180°C.
  • Grate the zucchini and wring out the excess moisture/ pat with paper towels.
  • Mix all the wet ingredients together in a large bowl. 
  • In a small bowl, mix the dry ingredients until well mixed and there are no lumps. Stir the dry ingredients into the wet ingredients. 
  • Stir in the zucchini and then the chocolate.
  • Divide between 12 muffin cases and bake for 25 minutes.
  • Let cool before icing! Enjoy
